Samurai Chef, Inc. was founded by Mike Furuichi in San Diego, California in 2014 to operate Authentic Japanese Ramen restaurants. Hajime Kitayama joined the company in 2015 as a partner and an executive chef of "Nishiki Ramen" at Kearny Mesa. Both Mike and Hajime were born and raised in Tokyo Japan. They offer the authentic Japanese ramen in Tokyo Style.
Nishiki Ramen has become one of the most successful ramen restaurant in San Diego with a lot of local customers. Over 1000 customers on each day of weekend visit and enjoy the authentic Japanese ramen.
In 2018, Samurai Chef, Inc. opened the second location with a new brand name of "Manten Ramen" at Hillcrest, San Diego. Manten means a whole universe in Japanese. Mike and Hajime have created their ramen as if everything is in a bowl such as broth, noodle, proteins and vegetables with a variety of natural flavors. That really means a whole universe in a bowl of ramen.
They also chose "Hillcrest" as their second location because Hillcrest is a symbol town of diversity. Mike and Hajime believe the concept of Manten fits people with the diversity of cultures and beliefs.
Samurai Chef, Inc. is currently planning to open the third location.
